Grilled Halloumi on a Stick Recipe
I don’t know about you, but sometimes the marshmallow thing can get a little... much. It’s not always the right time of day for a sugar hit.
So in the spirit of keeping campfire time delicious, we’re starting a new tradition: Friday Feasts, fun and easy snacks on sticks to enjoy around the fire.
And today, we’re kicking off with a crowd favourite: Grilled Halloumi on a Stick.
If you’ve never tried halloumi before, you are in for a treat. This salty, firm cheese hails from Cyprus and is sometimes called “squeaky cheese” (at least, that’s what the kids tell us!) because it squeaks against your teeth when you bite into it.
It’s firm enough to hold its shape over a fire, and when grilled, it bubbles and browns into something seriously delicious.
You’ll need:
1 block of halloumi
Olive oil
Optional extras: honey, fresh thyme leaves, chilli flakes
What to do:
Slice your halloumi into 2 to 2.5 cm squares or batons, just big enough to skewer securely. (Try a tester piece before cutting the whole block!)
Dry the surface gently with paper towels. This helps it brown beautifully.
Drizzle lightly with olive oil.
Skewer onto clean campfire sticks.
Grill over hot coals until the cheese is golden and bubbling on the outside.
Ways to fancy it up:
Honey: Drizzled over the hot cheese, it balances the salty tang with sweetness.
Fresh thyme leaves: Adds an earthy flavour that pairs beautifully with the honey and cheese.
