Friday Feasts: Gnocchi Skewers Edition
Yes, I know! This isn’t our usual kind of content but we’re rolling with it because we’re (slowly) putting together some kind of campfire cookbook-thingy-ma-jiggy. Doing this once a week keeps me on track, and hey, it’s tasty!
This week, we’re feasting with… gnocchi!
I came across a recipe that grilled gnocchi on skewers and thought, why not? It works surprisingly well! The trick is using bigger gnocchi so they don’t fall apart (store-bought is totally fine! That’s what we used).
What You’ll Need:
1 pack of large gnocchi (store-bought or homemade)
Salt and pepper
Olive oil
Wooden skewers
Optional for dipping sauce:
A handful of cherry tomatoes
A knob of butter
Extra salt to taste
What To Do:
Season your gnocchi with salt and pepper.
Thread the gnocchi onto wooden skewers.
Brush the gnocchi with olive oil
Grill for about 7–8 minutes, turning halfway through, until golden brown and lightly crisped on the outside.
Bonus: Make a Quick Dipping Sauce 🍅
Thread cherry tomatoes onto a separate skewer.
Grill them until the skins blister and they start to collapse.
Transfer to a ramekin and mash them up.
Stir in a little butter and a pinch of salt until it’s smooth and saucy.
Serve it on the side for dipping!
